Last year, when I was visiting Germany, I had a pleasure to visit Gourmet Tempel Weinheim GmbH, buffet all you can eat style chinese gourmet restaurant with a lot of unique meats to try, like Zebra Meat, frogg legs, whale, shark meat, duck, etc. I thought how nice it would be to make a restaurant experience in USa more affordable like this: buffer or potluck style.

My take on this from the economic perspective: this does make variety & huge number of diversified food industry tastes more affordable & more available to the general lower to middle class social population. However, this create extremely heightened competition for the small local family restaurants, that stick with brick & mortal dining styles. I hate to see any businesses close, but I think this social economical change may lead to many middle class small business closures, without external government or private sponsorship. It would be helpful for local credit unions or banks to financially support or sponsor their favorite local restaurants, otherwise you all my end up in the deep hole.
